What type of flavoring does herbs de provence bring to baked chicken?

A recipe I looked up calls for herbs de provence. When I went to the market to purchase the herbs they look like potpourri! So I hesitated. Any input? Thanks in advance!

    Thyme is one but to make it easier here is a list of herbs that you will need to have on hand herbs of Provence , you can grow your own if you have a spot in the garden or even in pots , to be used fresh or
    they will look like these or finer when you crushed dried ,if you are going to use them fresh tie them into a bouquet this way they are easy to be removed, if you are using them dry use a piece of cheese cloth tied and drop the sachet into the pot remove it before serving.
